Lady G's Delicius Vegetable Soup


Part of my healthy lifestyle journey has been incorporating a lot of vegetables into my diet. This is a very very delicious soup that will have you licking the bowl and asking for more, and the best part is that it is healthy, so you can lick the bowl and be free from guilt!.

Ingredients:
Baby Carrots
Broccoli
Yellow Onion
Tomatoes
2 tbsp of Tomato puree
Green lettuce or spinach
Canola Oil
Knorr cube
1/2 tbsp of curry
Red and black pepper mix (for some spice!)
Garlic  (optional but preferable)



Step 1: 
Pour about 4-5tbsp of canola oil into your sauce pan. While the oil is heating slice your onions and saute in the oil.

Step2: 
As you are sauteing the onions, rinse all your vegetables and dice them. You don't want to cut them too tiny because you want the soup to be nice and chunky. After dicing your tomatoes, carrots, broccoli and lettuce, pour the tomatoes first into the pot with the onions and stir together. You will see all the water from the tomatoes start to come out. Let the tomatoes and onions cook together for about 2 minutes just to get the tomato juice and flavor out.

Step 3:
After your tomatoes and onions have cooked together for a few minutes, you may now add the carrots and broccoli to the mix. At this point if the soup is dry add water, remember this is chunky soup so you don't want to add too much water, just a little bit. Add your spices, 1 knorr cube, 1/2 tbsp of curry, a tbsp of minced garlic, shake in some red&black grounded peppers to liking and 2tbsp of tomato puree for color. You can also add salt to taste. Put the cover on the pot and let it all boil together. DON'T OVER BOIL IT! You don't want to overcook the vegetables , not only will it make them soft and yucky but it destroys the proteins and nutrition in them

Step 4:
Your soup has boiled for a short 2 minutes, it's time to add the last touch. Pour in your spinach or green lettuce and stir in in well. Let it all boil together for just one minute for the spinach or lettuce to cook and then you are all done!  Time to serve and enjoy.



This dish goes perfectly on a cold winter night and also goes very deliciously served as a meal with some smoked or baked fish! Hope you enjoy it and let me know how it turns out!
